INSTRUCTIONS:

  1. Add the oil to the insert of the Instant Pot and select the Saute function (making sure the temperature is adjusted, using the + or - button, to normal). Add the onions, and cook, stirring often, until they start to soften and turn translucent, 2-3 minutes. Add the garlic and ginger and cook for 10-20 seconds.
  2. Add the chicken and cook, stirring often, 1-2 minutes.
  3. Add the potatoes, spices (coriander, garam masala, turmeric, salt and paprika), tomato sauce, and coconut milk. Stir well.
  4. Secure the lid and make sure the valve is closed. Select the Manual or Pressure Cook button and dial up or down to 6 minutes. The Instant Pot will start on it's own.

  4. Lower heat and simmer 3-4 minutes. Taste the sauce and adjust seasoning to your liking.

Pasta:

  1. Boil pasta in salty water, drain, but do not rinse. Reserve 1/2 cup of pasta water. If you think the sauce needs thinning, add reserved pasta water to the sauce. Add it slow - as much as you would like to have according to your liking.
  2. Add cooked pasta into the sauce and stir until fully coated. Add chicken into the skillet with pasta to reheat.
  3. Serve with sauce spooned over chicken and pasta, and sprinkled with chopped parsley.

  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • a few dashes of hot sauce (optional)

INSTRUCTIONS:
BOURBON BBQ SAUCE:

  1. Add a drizzle of olive oil to a saucepan over MED heat.  Add onion and garlic and cook about 5 minutes.  Add in bourbon and continue cooking about 3 minutes.
  2. Add tomato paste and whisk to break it up.  Add all remaining sauce ingredients and whisk to combine.  Increase heat to MED-HIGH and bring to a boil.  Reduce heat to MED-LOW or LOW and simmer for about 15-20 minutes.
  3. Pour sauce through a fine mesh sieve to strain out onion and garlic pieces if you like a smooth, glossy sauce.  Set aside and cool.  Store leftover bbq sauce in an airtight container in the refrigerator for 2-3 weeks.

SMOKE CHICKEN WINGS:

  1. Pat chicken wings dry with a clean paper towel.  Add wings to a large mixing bowl and toss with vegetable oil.  Add rub and massage into the wings, making sure each wing is coated.  
  2. Add hickory wood pellets to hopper.  Turn on smoker, open lid and set to the SMOKE setting.  Heat on SMOKE, with the lid open, for 5-10 minutes, until very smoky.  Add chicken wings to oiled grill grates, set smoker to 250 F degrees.  Close smoker lid and smoke for 2 hours 30 minutes, or until chicken wings reach an internal temperature of 165 F degrees.  Use an instant read meat thermometer to insure accurate cooking temperatures.
  3. Change smoker setting to HIGH and baste chicken wings on both sides with bourbon bbq sauce.  Cook wings for 5 minutes, then flip them over and cook 3-5 minutes on the other side.
  4. Select SHUT DOWN on smoker and remove chicken wings to a foil or parchment lined plate or baking sheet.  Let rest 5-10 minutes.  Turn smoker off and unplug it.  
  5. Eat wings as is, or brushed with additional bbq sauce.  Dip in blue cheese or ranch dressing and serve with celery and carrots for a traditional experience.

  • 2 small bell pepper
  • 1/2 teaspoon white pepper
  • 3/4 cup chicken broth/water
  • Salt and to taste

INSTRUCTIONS:

  1. Place chicken thighs in a large bowl or slow-cooker insert. Then seasoned with all marinate ingredients- salt, chicken bouillon, garlic, ginger, paprika, white pepper and thyme. Mix chicken with a spoon or with hands until they are well coated, cover tightly and set aside in the fridge Marinate for about an hour or preferably over night
  2. When ready to cook heat up a skillet or large sauce pan with about 2 tablespoons oil, and then brown the chicken about 3-4 minutes until chicken is golden brown: remove and place in the crockpot. Drain any excess oil from the skillet and leave about 2 Tablespoons of oil.
  3. Add onions, garlic, hot sauce, smoked paprika, sugar,browning sauce, ketchup, bell peppers and salt to taste. Stir for about 2-3 minutes until onions is translucent.
  4. Then add to crockpot, deglaze pan with about ¾ cup of water add to slow cooker, together with ketchup, brown sauce and any remaining marinate from the chicken.
  5. Cover and cook on high for about 3-4 hours. Remove and serve with rice and beans

  • 1 ounce packet taco seasoning
  • 2 cups salsa (16 ounce jar)
  • 2 cups chicken broth
  • 1 cup white rice, uncooked
  • 15 ounce can black beans, drained and rinsed
  • 1 cup frozen (and thawed) or canned corn
  • 1 cup sour cream
  • 3/4 cup chopped fresh cilantro
  • 3 cups lightly crushed tortilla chips or Doritos, (about 6 ounces)
  • 2 cups shredded cheddar or Colby jack cheese

INSTRUCTIONS:

  1. In large skillet heat olive oil over medium-high heat. Sauté pepper and onion until almost tender, about 3 minutes. Add garlic and sauté 30 seconds longer. 
  2. Add chicken to the skillet and cook 4-5 minutes, or until chicken is no longer pink on outside (chicken will finish cooking through later). Stir in taco seasoning. 
  3. Add rice, salsa, and chicken broth back to skillet. Bring to boil, cover, turn heat down and simmer for 22 minutes. Preheat oven to 350ºF.
  4. Remove lid (there may still be liquid on top, but once mixture is stirred the extra liquid will be absorbed). Stir in beans, corn, sour cream, and cilantro. Remove from heat. 
  5. In a 9X13 pan layer half of the chicken mixture, top with half of the chips, and half of the cheese. Repeat layer with second half. Bake for 20-25 minutes, or until cheese is melted and casserole is hot throughout.

  • 1 (15-ounce) can tomato puree (or passata)
  • 1 ½ teaspoon grated ginger (or paste)
  • 8 cloves garlic, grated or minced
  • 2 teaspoons dried fenugreek leaves
  • 1 teaspoon EACH: ground cumin, ground coriander, smoked paprika AND garam masala (see notes for garam masala)
  • ½ teaspoon ground turmeric 
  • ¼ – ½ teaspoon cayenne pepper
  • ½ cup heavy cream
  • cooked basmati rice + naan + chopped cilantro, for serving

INSTRUCTIONS:

  1. MARINATE THE CHICKEN: In a medium bowl, whisk together the yogurt, lemon juice, ginger paste, garlic paste, ground white pepper, 1 teaspoon salt, and garam masala. Add the diced chicken and mix; set aside for at least 20 minutes. If you’ve got time, I suggest covering with plastic wrap and letting it hang out in the refrigerator for 1-10 hours.
  2. SAUTE: Select the sauté mode on your instant pot when it’s hot, add the oil followed by the marinated chicken (along with the marinade) and let sauté for 2-3 minutes, stirring so nothing sticks to the bottom.
  3. PRESSURE COOK: Add all of the remaining ingredients for the sauce (except the cream) along with ½ teaspoon salt and stir everything well. Cover with the lid, make sure it is set to ‘seal’ and let cook on manual high pressure for 9 minutes. Use the quick release lever to release the steam as soon as the timer goes off.
  4. FINISH: Hit the sauté button and drizzle in the cream; stir to combine. When the tikka masala reaches a gentle simmer. Turn off and serve warm with naan and cooked rice topped with chopped cilantro.
