  2. Remove and reserve (for basting) 1/4 cup of this marinade.
  3. Marinate the pork tenderloin: Place pork tenderloin into a marinating bag or bowl and cover with the remaining marinade. Marinate at room temp for an hour, while you prepare your grill.
  4. Prepare the grill: Prepare your grill for both direct and indirect heat. When your grill is ready (you should be able to hold your hand an inch above the grill grates on the hot side for only one second), remove the tenderloin from the marinade and brush the tenderloin with olive oil.
  5. Sear tenderloin on all sides on high direct heat: Place tenderloin on grill on direct high heat. After the tenderloin sears on one side, turn it to sear on another side.
  6. Keep turning until the tenderloin has been nicely browned on all sides. Baste the tenderloin with reserved marinade while you grill it.
  7. Move to cooler side of the grill and cover: Once all side have been nicely browned, move the tenderloin to the cooler side of the grill. Cover and cook for 5 to 10 minutes more until just done.
  8. Remove from grill when the internal temperature of the tenderloin is no more than 140°F.
  9. Tent with foil and let rest: Tent with foil and let rest for 10 to 15 minutes.
  10. Slice and drizzle with reserved marinade to serve: Slice and arrange on a serving plate, drizzle with remaining reserved marinade. Serve with bok choy, rice, asparagus, or snap peas.

  5. Lightly spray a 9x13-inch pan with cooking spray. Spread 1 cup meat sauce in the bottom of the pan. Top with 6 lasagna noodles, lengthwise and overlapping to cover.
  6. Top noodles with half of the cottage cheese, top with third of mozzarella cheese. Spoon 1/2 of meat sauce over cheese; sprinkle with 1/4 cup parmesan.

Place 1 meatball (they can be frozen still, no need to pre-thaw!) into the center of each cup. Spoon another 2 teaspoons of marinara sauce on top of the meatball, then finish with more mozzarella cheese.
  5. Bake for 15-17 minutes, until crescent dough is golden brown and cheese is bubbling. Remove from oven. Let cool a few minutes, then remove each meatball bite from the muffin pan. Serve with additional marinara sauce, if desired.

  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • a few dashes of hot sauce (optional)

INSTRUCTIONS:
BOURBON BBQ SAUCE:

  1. Add a drizzle of olive oil to a saucepan over MED heat.  Add onion and garlic and cook about 5 minutes.  Add in bourbon and continue cooking about 3 minutes.
  2. Add tomato paste and whisk to break it up.  Add all remaining sauce ingredients and whisk to combine.  Increase heat to MED-HIGH and bring to a boil.  Reduce heat to MED-LOW or LOW and simmer for about 15-20 minutes.
  3. Pour sauce through a fine mesh sieve to strain out onion and garlic pieces if you like a smooth, glossy sauce.  Set aside and cool.  Store leftover bbq sauce in an airtight container in the refrigerator for 2-3 weeks.

SMOKE CHICKEN WINGS:

  1. Pat chicken wings dry with a clean paper towel.  Add wings to a large mixing bowl and toss with vegetable oil.  Add rub and massage into the wings, making sure each wing is coated.  
  2.   3. Add the remaining meatloaf ingredients and use your hands to combine. Try to ensure that the bread is sufficiently combined into the mixture, although try not to overmix as the ground beef will become tougher and lose some flavor.
  4. Form the meat into a loaf, (about 5 inches wide), and place it over a broiler pan to allow the fat to drain. Lining the bottom of the broiler pan with foil will make for easier cleanup.
  5. Line the bacon over the top of the loaf and carefully tuck the ends under the bottom. The bacon can be used to help support the shape of the loaf. I like to line them so that they are touching, but not overlapping so that you can easily slice in between each piece of bacon when it’s cooked.
  6. Combine the sauce ingredients and brush 1/3 of it over the meatloaf.
  7. Bake the meatloaf for 45 minutes on the middle rack. Remove it from the oven and brush another 1/3 of the sauce over it. Bake for another 25 minutes.
  8. Remove from the oven and let it sit for 10 minutes prior to slicing, letting it rest allows the juices to absorb back into the meat, cutting in too early will cause the juice to run out of the loaf.
  9. Serve with the remaining sauce and enjoy! These are delicious with mashed potatoes and roasted green beans!
